Creamy Lemon and Herb Fermentelli Pasta

This dish is a light and vibrant pasta dish that is perfect for a summer meal. The slight tang from the fermented pasta complements the bright, acidic lemon and fresh herbs.

Ingredients:

  • Fermentelli pasta
  • 1 lemon (zest and juice)
  • 1 cup heavy cream or crème fraîche
  • 1/2 cup grated Parmesan cheese
  • Fresh herbs (parsley, basil, chives), chopped
  • Garlic, minced
  • Olive oil
  • Salt and pepper to taste

Instructions:

  • Cook the Fermentelli pasta
  • While the pasta cooks, sauté the garlic in olive oil until fragrant.
  • Add the lemon zest and juice, and cook for a minute.
  • Pour in the cream and Parmesan cheese, and simmer until the sauce thickens slightly.
  • Season with salt and pepper.
  • Drain the pasta and add it to the sauce.
  • Toss to coat, and stir in the fresh herbs.
  • Serve immediately.
