
Creamy Lemon and Herb Fermentelli Pasta

This dish is a light and vibrant pasta dish that is perfect for a summer meal. The slight tang from the fermented pasta complements the bright, acidic lemon and fresh herbs.
Ingredients:
- Fermentelli pasta
- 1 lemon (zest and juice)
- 1 cup heavy cream or crème fraîche
- 1/2 cup grated Parmesan cheese
- Fresh herbs (parsley, basil, chives), chopped
- Garlic, minced
- Olive oil
- Salt and pepper to taste
Instructions:
- Cook the Fermentelli pasta
- While the pasta cooks, sauté the garlic in olive oil until fragrant.
- Add the lemon zest and juice, and cook for a minute.
- Pour in the cream and Parmesan cheese, and simmer until the sauce thickens slightly.
- Season with salt and pepper.
- Drain the pasta and add it to the sauce.
- Toss to coat, and stir in the fresh herbs.
- Serve immediately.
