
Spicy Sausage and Tomato Fermentelli Pasta

The depth of flavor in the fermented pasta stands up well to a rich, spicy tomato sauce with sausage.
Ingredients:
- Fermentelli pasta
- Italian sausage (spicy or sweet), removed from casings
- 1 can crushed tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- Red pepper flakes (to taste)
- Olive oil
- Salt and pepper
- grated parmesan cheese.
Instructions:
- Cook the Fermentelli pasta
- Brown the sausage in olive oil, breaking it up with a spoon.
- Add the onion and garlic, and cook until softened.
- Stir in the crushed tomatoes, red pepper flakes, salt, and pepper.
- Simmer the sauce for at least 15-20 minutes, allowing the flavors to meld.
- Drain the pasta and add it to the sauce.
- Toss to coat and serve with grated parmesan cheese.
