Spicy Sausage and Tomato Fermentelli Pasta

The depth of flavor in the fermented pasta stands up well to a rich, spicy tomato sauce with sausage.

Ingredients:

  • Fermentelli pasta
  • Italian sausage (spicy or sweet), removed from casings
  • 1 can crushed tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Red pepper flakes (to taste)
  • Olive oil
  • Salt and pepper
  • grated parmesan cheese.

Instructions:

  • Cook the Fermentelli pasta
  • Brown the sausage in olive oil, breaking it up with a spoon.
  • Add the onion and garlic, and cook until softened.
  • Stir in the crushed tomatoes, red pepper flakes, salt, and pepper.
  • Simmer the sauce for at least 15-20 minutes, allowing the flavors to meld.
  • Drain the pasta and add it to the sauce.
  • Toss to coat and serve with grated parmesan cheese.
